Is all Sichuan food extremely spicy?
No. Many dishes use heat, but the deeper pattern is balance: spice, aroma, fermented depth, acidity, and texture.
What does mala mean?
Mala means numbing and spicy. Chili brings heat; Sichuan peppercorn brings the tingling aroma.
Why does my dish taste hot but flat?
It is usually missing fermented depth, vinegar brightness, fresh aromatics, or proper oil aroma.
Can I replace doubanjiang?
You can cook spicy food without it, but many Sichuan classics lose their fermented savory base.
